The Torajan tribe, living in the central mountain region of Sulawesi, continues to maintain a traditional village lifestyle that includes houses which resemble boats. The growing region has a complex geography including low-level rice paddies flanked by thousand-foot rock walls. Coffee is grown here at some of the highest elevations in all of Indonesia. Similar to other Indonesian coffees, Sulawesi features deep, earthy notes such as dark chocolate and cedar which are best enhanced by a dark roast.
